This coffee is sourced from the southern states of Chiapas and Oaxaca, where there are mountain ranges that provide higher altitudes and ideal climates for cultivating coffee.  The vast majority of farms are family-owned with less than 10 acres of land.
Heirloom varietals, Bourbon, Caturra, Criollo, Mundo Novo and Typica grown at altitudes to 1500 meters above sea level for greater complexity of flavor profiles.  Farm owners and producers have focused on organic production methods to protect the environment, increase overall quality, and gain higher income to improve the livelihood of their families.
